2 cups rolled oats

1 cup Greek yogurt (vanilla-flavored or plain)

1 cup mixed frozen berries (strawberries, blueberries, raspberries)

1/4 cup honey or maple syrup (adjust for sweetness)

1/2 teaspoon vanilla extract

1/4 teaspoon cinnamon (optional)

A pinch of salt

1/4 cup chopped nuts or seeds (optional, for added crunch)

Instructions
 

Prepare the Base: In a large mixing bowl, combine the rolled oats, Greek yogurt, honey (or maple syrup), vanilla extract, cinnamon, and salt. Mix well until all ingredients are thoroughly combined and the oats are evenly coated.

    Add Berries: Gently fold the frozen mixed berries into the oat mixture, ensuring they are evenly distributed without breaking them apart too much.

      Line the Baking Sheet: Line a baking sheet (approximately 9x13 inches) with parchment paper for easy removal.

        Spread the Mixture: Pour the mixed oat and berry mixture onto the prepared baking sheet. Use a spatula to evenly spread the mixture out into a thin layer, about 1/4 inch thick. If using, sprinkle the chopped nuts or seeds on top for added texture.

          Freeze: Carefully place the baking sheet in the freezer. Allow the mixture to freeze for at least 2-3 hours or until it is solid.

            Break into Pieces: Once frozen, remove the baking sheet from the freezer. Lift the oatmeal bark out using the parchment paper and place it on a cutting board. Use a sharp knife or your hands to break the bark into uneven pieces or squares.

              Store: Place the bark pieces in an airtight container lined with parchment paper to prevent sticking. Keep in the freezer for up to 2-4 weeks for a quick breakfast option.

                Serve: To enjoy, remove a piece or two from the freezer and let it sit at room temperature for a couple of minutes to soften slightly, then dig in!
