2 ripe bananas

1 cup Greek yogurt (plain or flavored)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 cup mini chocolate chips

1/4 cup crushed nuts (walnuts or almonds)

1/4 cup granola or crushed graham crackers

A few maraschino cherries for topping (optional)

Fresh strawberries or raspberries for garnish (optional)

Instructions
 

Start by peeling the bananas and slicing them lengthwise into halves, creating a total of four long banana halves.

    In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well mixed and creamy.

      On a flat surface or a large baking sheet, lay down two banana halves side by side.

        Spread a generous layer of the yogurt mixture on the cut side of each banana half.

          Sprinkle mini chocolate chips, crushed nuts, and granola (or crushed graham crackers) evenly over the yogurt layer.

            Carefully place the remaining banana halves on top to create a sandwich-like structure. You can press down gently to help them stick together.

              Once the banana sandwiches are assembled, you can either wrap them individually in plastic wrap or place them on the baking sheet with parchment paper for easier cleanup.

                Freeze the sandwiches for at least 2-3 hours or until solid.
