Ingredients

2 ripe bananas

1 cup coconut yogurt (dairy-free or regular, based on preference)

1/4 cup unsweetened shredded coconut

2 tablespoons honey or maple syrup (optional, for sweetness)

1/2 teaspoon vanilla extract

1/4 teaspoon cinnamon (optional)

A pinch of sea salt

Dark chocolate chips or cocoa nibs for topping (optional)

Instructions

Prepare the Bananas: Peel the ripe bananas and slice them into thick rounds, about 1/2 inch thick. Arrange them on a parchment-lined baking sheet.

Make the Yogurt Mixture: In a medium bowl, combine the coconut yogurt, honey or maple syrup (if using), vanilla extract, cinnamon (if using), and sea salt. Stir until the mixture is well combined and smooth.

Coat the Banana Rounds: Using a small spoon or a spatula, generously dollop the yogurt mixture on top of each banana round, ensuring they are completely covered.

Sprinkle Coconut: After coating the banana rounds with the yogurt mixture, sprinkle a pinch of shredded coconut on each one for an extra layer of flavor and texture.

Add Optional Toppings: If desired, sprinkle a few dark chocolate chips or cocoa nibs on top for a delightful crunch.

Freeze: Place the baking sheet in the freezer and allow the banana yogurt rounds to freeze for at least 2 hours, or until completely firm.

Serve: Once frozen, remove the rounds from the baking sheet and enjoy immediately, or transfer them to a sealed container to keep in the freezer for a quick snack later!
