1/2 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1 cup buttermilk

1 large egg

2 tablespoons melted butter (plus extra for frying)

1 cup sweet corn kernels (fresh, frozen, or canned)

1/2 cup diced jalapeños (fresh or pickled, optional)

Green onions, chopped for garnish (optional)

Mix Dry Ingredients: In a mixing bowl, combine cornmeal, flour, sugar, baking powder, baking soda, and salt. Whisk together until evenly mixed.

    Combine Wet Ingredients: In another bowl, whisk together buttermilk, egg, and melted butter until well combined.

      Combine Mixtures: Pour the wet mixture into the dry ingredients and stir gently to combine. Do not overmix; a few lumps are okay.

        Add Corn and Jalapeños: Fold in the sweet corn kernels and jalapeños (if using) until evenly distributed throughout the batter.

          Heat Oil: In a large skillet or frying pan, heat about 1/4 inch of oil over medium-high heat until shimmering but not smoking.

            Fry Fritters: Using a spoon or a small ice cream scoop, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

              Drain: Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil. Repeat with the remaining batter.
