Fresh Tomato Feta Pasta

2 cups cherry tomatoes, halved

8 oz feta cheese, block style

3 cloves garlic, minced

1/4 cup olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust for heat preference)

Salt and pepper, to taste

12 oz pasta (e.g., spaghetti or penne)

Fresh basil leaves, for garnish

Zest of 1 lemon

Juice of 1/2 lemon

Grated parmesan cheese, for serving (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a large baking dish, combine the halved cherry tomatoes, minced garlic, olive oil, dried oregano, red pepper flakes, salt, and pepper.

      Add Feta: Place the block of feta cheese in the center of the dish among the tomatoes. Drizzle a little extra olive oil on top of the feta and season with a pinch of salt and pepper.

        Bake: Bake in the preheated oven for about 30 minutes, or until the tomatoes are blistered and the feta is golden on top.

          Cook Pasta: Meanwhile, bring a large pot of salted water to a boil. Cook your pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta.

            Combine: Once the feta and tomatoes are ready, remove the baking dish from the oven. Use a fork to mash the feta and mix it with the roasted tomatoes, creating a creamy sauce. If it's too thick, add a bit of the reserved pasta water to achieve your desired consistency.

              Mix with Pasta: Toss the cooked pasta into the baking dish with the tomato-feta mixture. Stir well to ensure the pasta is evenly coated.

                Add Fresh Ingredients: Stir in the lemon zest and lemon juice. Adjust seasoning with more salt and pepper if necessary.

                  Garnish and Serve: Serve hot, garnished with fresh basil leaves and a sprinkle of grated parmesan cheese if desired.
