1/4 cup black beans, rinsed and drained

1/2 teaspoon taco seasoning (optional)

Olive oil or cooking spray

Prepare the Veggies: Start by washing and chopping the bell peppers and fresh spinach. If using frozen corn, just make sure to thaw it properly.

    Mix the Filling: In a medium bowl, combine the chopped bell peppers, spinach, corn, black beans, and taco seasoning (if using). Stir until well mixed. This colorful mix will be the filling for your quesadillas.

      Assemble the Quesadillas: Place a tortilla on a clean, flat surface. Evenly sprinkle a quarter of the shredded mozzarella cheese over one half of the tortilla. Top the cheese with a generous scoop of the veggie mixture, then fold the tortilla in half to form a crescent shape.

        Cook the Quesadilla: Heat a non-stick skillet over medium heat and lightly coat it with olive oil or cooking spray. Place the folded quesadilla in the skillet.
