Ingredients
  

1 cup jasmine or basmati rice

2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup corn kernels (fresh or canned)

1 cup bell peppers (mixed colors), diced

1 avocado, sliced

½ cup fresh basil leaves, chopped

½ cup feta cheese, crumbled (optional)

Juice of 1 lime

2 tablespoons olive oil

Salt and pepper to taste

Optional garnish: toasted sunflower seeds or pumpkin seeds

Instructions
 

Cook the Rice: In a medium saucepan, combine the jasmine or basmati rice and the vegetable broth. Bring it to a boil over medium-high heat, then reduce the heat to low, cover the pot, and simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    Prepare the Vegetables: While the rice is cooking, rinse and chop the cherry tomatoes, cucumber, bell peppers, and avocado. If using fresh corn, cut the kernels off the cob.

      Mix the Dressing: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined.

        Assemble the Rice Bowl: In a large bowl, combine the cooked rice, cherry tomatoes, cucumber, corn, and bell peppers. Drizzle the lime dressing over the mixture and gently toss to combine. Add chopped basil leaves and fold in gently.
