For the Nachos:

1 bag of tortilla chips (12 oz)

2 cups shredded Monterey Jack cheese

1 cup black beans, rinsed and drained

1 cup fresh corn kernels (can use frozen, thawed)

1 medium ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, thinly sliced (optional)

1 lime, juiced

For the Lime Crema:

1/2 cup sour cream

1/4 cup mayonnaise

1 lime, zested and juiced

Salt and pepper, to taste

For Garnishing:

Extra cilantro leaves

Lime wedges

Prepare the lime crema: In a small mixing bowl, combine the sour cream, mayonnaise, lime zest, and lime juice. Mix well until smooth. Season with salt and pepper to taste, then refrigerate while you prepare the rest of the nachos.

    Prep the toppings: In a separate bowl, combine diced avocado, cherry tomatoes, red onion, corn, black beans, and jalapeño if using. Drizzle with lime juice and stir gently to combine. Set aside.

      Layer the nachos: Preheat your oven to 400°F (200°C). On a large baking sheet or oven-safe platter, spread an even layer of tortilla chips. Top evenly with shredded Monterey Jack cheese, followed by the bean and vegetable mixture. Make sure the toppings cover the chips for a flavorful bite.

        Bake the nachos: Place the loaded nachos in the preheated oven for about 10 minutes, or until the cheese is completely melted and bubbly.
