4 boneless, skinless chicken thighs

1 tablespoon olive oil

1 medium red bell pepper, sliced

1 medium yellow bell pepper, sliced

1 medium zucchini, diced

1 cup cherry tomatoes, halved

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup fresh basil leaves, torn

1 lemon, juiced and zested

1/4 cup feta cheese or goat cheese (optional)

Prep the Chicken: Season the chicken thighs with salt, pepper, oregano, and smoked paprika. Set aside.

    Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat. When the oil is hot, add the seasoned chicken thighs. Sear for about 5-7 minutes on each side, or until browned and cooked through. Remove the chicken and set aside.
