4 ripe peaches, diced

1 tablespoon fresh basil, chopped

1 tablespoon balsamic vinegar

1 tablespoon honey (or to taste)

1 clove garlic, minced

1 tablespoon olive oil, plus more for drizzling

1 baguette or ciabatta loaf, sliced

4 ounces fresh mozzarella cheese, sliced

Optional: extra basil leaves for garnish

Prepare the Peach Topping: In a mixing bowl, combine the diced peaches, chopped basil, balsamic vinegar, honey, minced garlic, and olive oil. Gently toss until well mixed. Season with salt and pepper to taste. Let it sit for 15-20 minutes to allow the flavors to meld.
