Ingredients

1 cup fresh blueberries

1 cup Greek yogurt (plain or vanilla)

1 tablespoon honey or maple syrup (optional)

1 teaspoon vanilla extract

½ cup granola (your choice of flavor)

½ cup mini dark chocolate chips (optional)

Fresh mint leaves for garnish

Instructions

Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey or maple syrup (if using), and vanilla extract. Stir until well blended and creamy.

Coat the Blueberries: Gently rinse the blueberries under cold water and pat them dry with a paper towel.

Dip the Blueberries: Using a toothpick or skewer, dip each blueberry into the yogurt mixture, allowing excess yogurt to drip off.

Roll in Granola: Place the yogurt-coated blueberries onto a plate. In a separate shallow dish, spread out the granola. Roll each yogurt-covered blueberry in the granola until fully coated.

Add Chocolate (Optional): If using, sprinkle the mini dark chocolate chips over the yogurt-coated blueberries for an extra burst of flavor.

Chill: Arrange the blueberry bites on a parchment-lined baking sheet. Place them in the freezer for about 30 minutes or until the yogurt is firm.

Serve: Transfer the chilled blueberry bites to a serving platter. Garnish with fresh mint leaves for a pop of color and freshness. Enjoy as a delightful snack or light dessert!
