French Onion Meatballs

For the Meatballs:

1 pound ground beef

1/2 pound ground pork

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

2 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper to taste

For the French Onion Sauce:

2 large onions, thinly sliced

4 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon sugar

2 cups beef broth

1/2 cup dry white wine (optional)

1 teaspoon Worcestershire sauce

1 teaspoon balsamic vinegar

1 tablespoon all-purpose flour (optional, for thickening)

Fresh thyme sprigs for garnish (optional)

Instructions
 

Prepare the Meatballs:

    In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, dried thyme, salt, and pepper. Mix well until evenly combined.

      Shape the Meatballs:

        Using your hands, form the mixture into 1-inch meatballs and set them aside on a baking sheet.

          Cook the Onions:

            In a large skillet, melt butter and olive oil over medium heat. Add the sliced onions and sprinkle with sugar. Cook for about 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized.

              Create the Sauce:

                Once the onions are caramelized, add the beef broth, white wine, Worcestershire sauce, and balsamic vinegar. Bring the mixture to a simmer. If you prefer a thicker sauce, mix the all-purpose flour with a small amount of water to create a slurry and stir it in. Allow to simmer for another 10 minutes.

                  Cook the Meatballs:

                    Preheat your oven to 375°F (190°C). In a separate skillet, sear the meatballs over medium-almost high heat until browned on all sides, about 5 minutes. You may need to do this in batches.

                      Combine and Bake:

                        Transfer the meatballs to a baking dish and pour the onion sauce over them. Cover the dish with aluminum foil and bake in the preheated oven for 20-25 minutes, until the meatballs are cooked through.

                          Serve:

                            Garnish with fresh thyme sprigs and serve hot. These meatballs are perfect with crusty bread or over creamy mashed potatoes!
