Ingredients

1/2 cup (60g) all-purpose flour

2 large eggs, separated

1/4 cup (30g) granulated sugar

1/4 cup (60ml) milk

1 teaspoon vanilla extract

1/2 teaspoon baking powder

A pinch of salt

Butter, for greasing the pan

Powdered sugar, for serving

Maple syrup, for drizzling

Fresh fruits or whipped cream (optional), for garnish

Instructions

Prep the Batter:

    - In a mixing bowl, sift the all-purpose flour and baking powder together. Set aside.

      - In another bowl, whisk the egg yolks and add the milk and vanilla extract, mixing until combined.

        Combine the Mixtures:

          - Slowly add the dry flour mixture to the wet ingredients, whisking until smooth and without lumps. Set the batter aside.

            Beat Egg Whites:

              - In a clean bowl, beat the egg whites on medium speed until they become frothy. Add a pinch of salt and gradually add the granulated sugar, continuing to beat until stiff peaks form.

                Fold Together:

                  - Gently fold the beaten egg whites into the batter in three parts. Start with about 1/3 of the whites to loosen the batter, then gradually fold in the remaining whites, being careful not to deflate the mixture.

                    Preheat the Pan:

                      - Heat a non-stick skillet over low heat and lightly grease it with butter.

                        Cook the Pancakes:

                          - Using a ring mold (if available), pour 1/4 cup of batter into the center of the mold. Cover the skillet with a lid and cook for about 4-5 minutes, or until bubbles form on the surface.

                            - Carefully flip the pancake, remove the mold, and cover again, cooking for another 4 minutes until the pancake is fluffy and golden brown. Repeat the process with the remaining batter.

                              Serve:

                                - Stack the pancakes on a plate, dust with powdered sugar, and drizzle with maple syrup. Add fresh fruits or whipped cream on top if desired.
