Ingredients

1 cup rolled oats

1 ripe banana, mashed

1 cup milk (dairy or non-dairy)

1 large egg

1 tablespoon honey or maple syrup (optional)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

Pinch of salt

1/2 teaspoon cinnamon (optional)

Butter or oil for cooking

Instructions

Blend the Oats: In a blender or food processor, grind the rolled oats into a fine flour. This will be the base of your pancake batter.

Combine Ingredients: In a mixing bowl, combine the oat flour, baking powder, baking soda, salt, and cinnamon (if using). Mix well to ensure even distribution of dry ingredients.

Mix Wet Ingredients: In another bowl, mash the ripe banana until smooth, then add the milk, egg, honey (or maple syrup), and vanilla extract. Whisk the mixture until it's well combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined — be careful not to overmix; a few lumps are okay.

Preheat Pan: Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil to coat the surface.

Cook Pancakes: Using a ladle, pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip carefully and cook for an additional 1-2 minutes, or until golden brown.

Serve: Repeat the process until all batter is used. Serve warm with your favorite toppings, such as fresh fruit, yogurt, nut butter, or a drizzle of honey or maple syrup.
