Ingredients

2 ripe bananas, mashed

1/3 cup melted coconut oil (or unsalted butter)

1/2 cup brown sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 cup all-purpose flour

1/2 cup chocolate chips (semi-sweet or milk chocolate)

Optional: 1/4 cup chopped walnuts or pecans

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

Mix Wet Ingredients: In a large bowl, combine the mashed bananas and melted coconut oil. Stir in the brown sugar until well blended. Add the egg and vanilla extract, mixing until fully incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, and flour.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently just until combined. Avoid overmixing to ensure your muffins stay fluffy.

Fold in Chocolate Chips: Carefully fold in the chocolate chips and, if desired, the chopped nuts, until evenly distributed throughout the batter.

Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full to allow for rising.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes. Then transfer them to a wire rack to cool completely.

Serve: Enjoy your fluffy banana chocolate chip muffins warm or at room temperature, with a glass of milk or a cup of coffee!
