1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 cups mixed bell peppers (red, yellow, green), sliced

1 cup broccoli florets

1 medium onion, thinly sliced

2 cloves garlic, minced

1-inch piece of ginger, minced

1/4 cup soy sauce (low sodium)

1/4 cup teriyaki sauce

2 tbsp honey or maple syrup

1 tbsp sesame oil

2 tbsp vegetable oil

1 tsp cornstarch mixed with 2 tbsp water (optional, for thickening)

Sesame seeds, for garnish

2 green onions, sliced, for garnish

Cooked rice or noodles, for serving

Prepare the Ingredients: Begin by prepping all ingredients. Slice the chicken, vegetables, and mince the garlic and ginger.

    Marinate the Chicken: In a bowl, combine the sliced chicken with soy sauce, teriyaki sauce, and honey. Let it marinate for 15-20 minutes to enhance the flavor.

      Cook the Chicken: In a large non-stick skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, or until fully cooked and lightly caramelized. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Stir in the onion, garlic, ginger, and sauté for about 2 minutes until fragrant. Add the bell peppers and broccoli, cooking for an additional 3-4 minutes or until the vegetables are tender-crisp.

          Combine: Return the chicken to the skillet with the vegetables. Stir to combine and add sesame oil. If you prefer a thicker sauce, mix the cornstarch with water and stir it into the stir-fry.

            Final Toss: Cook everything together for another 2-3 minutes, allowing the flavors to meld together. Adjust seasoning with more soy sauce or teriyaki sauce if desired.
