Ingredients
  

1 lb fresh spinach (baby spinach is preferable)

1 tbsp sesame oil

1 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp gochugaru (Korean red pepper flakes)

1 tsp sugar

2 cloves garlic, minced

1 tsp toasted sesame seeds

2 green onions, finely chopped

Optional: 1 tbsp of toasted sesame seeds for garnish

Instructions
 

Prepare the Spinach: Wash the spinach thoroughly under cold water to remove any dirt or sand. Drain well and set aside.

    Blanch the Spinach: Bring a large pot of water to a boil. Once boiling, add the spinach and blanch for about 30 seconds to 1 minute, just until wilted. Remove immediately and plunge into a bowl of ice water to stop the cooking process. This helps maintain the vibrant green color.

      Drain and Squeeze: Once cooled, drain the spinach again and gently squeeze out any excess water. Place the spinach in a large mixing bowl.

        Make the Dressing: In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, gochugaru, sugar, and minced garlic until well combined.

          Combine: Pour the dressing over the spinach. Add the finely chopped green onions and toasted sesame seeds. Toss everything together gently with your hands or salad tongs until the spinach is well coated with the dressing.

            Serve: Transfer the salad to a serving dish and sprinkle with additional toasted sesame seeds if desired. You may serve immediately or let it marinate for 10-15 minutes for a more intense flavor.
