Ingredients
  

2 cups uncooked long-grain rice

4 cups chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust for heat preference)

1 tablespoon soy sauce

1 can (15 oz) black beans, drained and rinsed

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Lime wedges for serving (optional)

Instructions
 

In a large skillet or pot, heat the olive oil over medium heat. Add the uncooked rice and toast it for about 3–4 minutes, stirring frequently to prevent burning until it turns light golden brown.

    Add the chicken broth to the toasted rice, followed by garlic powder, onion powder, smoked paprika, cayenne pepper, and soy sauce. Stir to combine.

      Bring the mixture to a boil, then reduce the heat to low and cover. Allow it to simmer for 15 minutes, or until the liquid is absorbed and the rice is tender.

        Once the rice is cooked, gently fold in the black beans and frozen mixed vegetables. Cover the pot and let it sit for an additional 5 minutes to warm the beans and vegetables.

          Fluff the rice with a fork and season with salt and pepper to taste. Garnish with fresh cilantro and serve with lime wedges if desired.
