Ingredients
  

For the crust:

2 ½ cups all-purpose flour

1 teaspoon salt

1 tablespoon granulated sugar

1 cup unsalted butter, cold and cubed

6-8 tablespoons ice water

For the filling:

4 large apples (Granny Smith or Honeycrisp), peeled and sliced

¾ cup brown sugar

1 tablespoon lemon juice

1 teaspoon ground cinnamon

½ teaspoon nutmeg

2 tablespoons cornstarch

1 teaspoon vanilla extract

For the topping:

1 egg, beaten (for egg wash)

1 tablespoon coarse sugar (for sprinkling)

Instructions
 

Make the crust:

    - In a large bowl, combine flour, salt, and sugar. Add the cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

      - Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough into two equal parts, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

        Prepare the filling:

          - In a large bowl, toss the apple slices with brown sugar, lemon juice, cinnamon, nutmeg, cornstarch, and vanilla extract. Let it sit for about 15 minutes while you prepare the crust.

            Assemble the pie bars:

              - Preheat the oven to 375°F (190°C).

                - Take one disc of dough out of the refrigerator and roll it out on a floured surface to fit a 9x13-inch baking dish. Place the crust in the dish, pressing it into the corners.

                  - Pour the apple filling over the crust, spreading it evenly.

                    - Roll out the second disc of dough and place over the apples. You can either leave it whole or cut slits to create a lattice pattern.

                      - Brush the top with beaten egg and sprinkle with coarse sugar.

                        Bake:

                          - Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the filling is bubbling.

                            - Remove from the oven and allow to cool completely in the pan before slicing into bars.

                              Serve:

                                - Serve the flaky apple pie bars as they are, or warm them up and top with a scoop of vanilla ice cream for an extra treat!
