Ingredients

1 bag of tortilla chips (10 oz)

1 cup of fig jam

1 1/2 cups shredded sharp cheddar cheese

1 cup crumbled goat cheese

1/2 cup sliced almonds (toasted)

1/2 cup fresh arugula (roughly chopped)

1/4 cup chopped fresh basil

1 medium red onion (thinly sliced)

2 tablespoons balsamic glaze

Freshly ground black pepper, to taste

Optional: 1 jalapeño (sliced) for heat

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Tortilla Chips: On a large baking sheet, evenly spread out the tortilla chips to create a single layer. You may need to use two baking sheets if they are overcrowded.

Layer the Cheese: Sprinkle the shredded sharp cheddar cheese generously over the chips, ensuring that most of them are covered. Follow with crumbled goat cheese for a creamy texture.

Add Fig Jam: Use a spoon or a small ice cream scoop to drop dollops of fig jam across the nachos, allowing the sweetness to mingle with the cheese.

Bake: Place the baking sheets in the preheated oven and bake for about 10-12 minutes or until the cheese is melted and bubbly, and the chips are slightly golden.

Garnish: Once out of the oven, top the nachos with sliced almonds, arugula, basil, and red onion for freshness. If you want some heat, scatter jalapeño slices on top.

Drizzle and Season: Drizzle the balsamic glaze over the nachos and finish with a sprinkle of freshly ground black pepper to taste.

Serve Immediately: Serve with extra fig jam or your favorite dipping sauce on the side!
