Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup almond milk (or any non-dairy milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup Sriracha sauce (adjust to taste)

2 tablespoons honey or maple syrup (for a vegan option)

2 tablespoons vegetable oil (for baking)

Fresh cilantro or green onions for garnish (optional)

Sesame seeds for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Make the Batter: In a large mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually add the almond milk, stirring until you have a smooth batter.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it is fully coated. Allow excess batter to drip off before placing the florets on the prepared baking sheet. Arrange them in a single layer to ensure even baking.

Bake the Cauliflower: Drizzle the vegetable oil over the coated cauliflower florets. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through.

Prepare the Sriracha Sauce: While the cauliflower is baking, mix together the Sriracha sauce and honey (or maple syrup) in a small bowl. Adjust the heat level by adding more or less Sriracha according to your preference.

Toss with Sauce: Once the cauliflower is crispy, remove it from the oven and immediately toss it in the Sriracha sauce until well coated.

Serve: Transfer the fiery cauliflower bites to a serving platter. Garnish with chopped fresh cilantro or green onions and sprinkle with sesame seeds if desired. Serve immediately for the best taste!
