Ingredients

2 boneless, skinless chicken thighs

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon Sriracha (adjust based on heat preference)

4 cups chicken broth

2 packs of instant ramen noodles (discard the flavor packets)

1 cup shiitake mushrooms, sliced

1 cup bok choy, chopped

2 green onions, sliced

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon rice vinegar

Salt and pepper to taste

2 tablespoons oil (vegetable or canola)

Creamy Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons Greek yogurt

3 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon smoked paprika

Salt and pepper to taste

Instructions

Marinate the Chicken:

    - In a small bowl, combine soy sauce, sesame oil, and Sriracha. Add the chicken thighs, ensuring they’re well coated. Let marinate for at least 30 minutes.

      Prepare the Creamy Garlic Sauce:

        - In a mixing bowl, combine mayonnaise, Greek yogurt, minced garlic, lemon juice, smoked paprika, salt, and pepper. Stir until smooth and well blended. Adjust seasoning as desired. Set aside in the fridge.

          Cook the Chicken:

            - Heat oil in a skillet over medium heat. Remove chicken from the marinade (reserve the marinade) and add to the skillet. Sear each side for about 5-7 minutes or until cooked through and golden. Once cooked, remove chicken and let it rest for a few minutes before slicing.

              Sauté Vegetables:

                - In the same skillet, add sliced shiitake mushrooms and cook for about 3-4 minutes until softened. Add bok choy, green onions, garlic, and ginger. Sauté for another 2-3 minutes. Season with salt and pepper, then pour the reserved marinade over the vegetables. Cook for an additional 1-2 minutes.

                  Prepare the Broth:

                    - In a large pot, bring chicken broth to a simmer over medium heat. Add the cooked vegetables and let simmer for 5 minutes.

                      Cook the Ramen:

                        - Add ramen noodles to the simmering broth. Cook according to package instructions (usually about 3-4 minutes) until tender.

                          Assemble the Dish:

                            - Divide the ramen and broth into bowls. Top with sliced chicken and drizzle with the creamy garlic sauce.

                              Garnish and Serve:

                                - Finish with extra green onions, a sprinkle of sesame seeds, and a drizzle of Sriracha if you love extra heat. Serve immediately and enjoy your Fiery Chicken Ramen with Creamy Garlic Sauce!
