Ingredients

For the Chicken Marinade:

2 boneless, skinless chicken breasts

3 tablespoons soy sauce

2 tablespoons sriracha

1 tablespoon honey

1 tablespoon rice vinegar

1 teaspoon sesame oil

2 cloves garlic, minced

For the Ramen:

4 cups chicken broth

2 packs of ramen noodles (discard the flavor packets)

1 cup mixed vegetables (carrots, bell peppers, and snow peas)

2 green onions, sliced

2 soft-boiled eggs (optional)

1 tablespoon sesame seeds

For the Creamy Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons sour cream

3 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon sriracha (adjust to taste)

Salt and pepper to taste

Instructions

Marinate the Chicken:

In a bowl, combine soy sauce, sriracha, honey, rice vinegar, sesame oil, and minced garlic. Add the chicken breasts, ensuring they're fully coated. Cover and marinate for at least 30 minutes (or up to 2 hours in the refrigerator for extra flavor).

      Prepare the Creamy Garlic Sauce:

In a small bowl, mix together mayonnaise, sour cream, minced garlic, lemon juice, sriracha, salt, and pepper until smooth. Adjust the sriracha for your desired level of heat. Refrigerate to allow flavors to meld.

          Cook the Chicken:

Heat a grill pan or skillet over medium-high heat. Remove chicken from the marinade and cook for about 6-7 minutes on each side or until fully cooked and juices run clear. Once done, let it rest for a few minutes before slicing.

              Cook the Ramen:

In a large pot, bring chicken broth to a boil. Add ramen noodles and cook according to package instructions (usually around 3-4 minutes). In the last minute of cooking, add the mixed vegetables to blanch them.

                  Assemble the Ramen Bowl:

Divide the cooked ramen and vegetables into bowls. Top with sliced grilled chicken, a soft-boiled egg (if using), sesame seeds, and a generous drizzle of creamy garlic sauce. Finish with sliced green onions for garnish.

                      Serve:

Enjoy the fiery chicken ramen hot with extra sriracha on the side for those who crave an extra kick!
