Feta and Tomato Puff Pastry Tart

1 sheet of puff pastry (thawed)

1 cup cherry tomatoes, halved

200g feta cheese, crumbled

1 small red onion, thinly sliced

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

Fresh basil leaves, for garnish

Salt and pepper, to taste

1 egg (for egg wash, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

    Prepare the Puff Pastry: Roll out the thawed puff pastry on a floured surface to smooth out any folds and ensure an even thickness. Transfer it to the lined baking sheet. Trim the edges if necessary and create a border by folding over 1 cm of the edges.

      Prepare the Tomato Mixture: In a medium bowl, combine the halved cherry tomatoes, sliced red onion, minced garlic, olive oil, balsamic vinegar, dried oregano, salt, and pepper. Toss everything together until the tomatoes are well coated.

        Assemble the Tart: Using a fork, prick the puff pastry all over (this helps prevent it from puffing too much). Spread the crumbled feta evenly over the pastry, leaving the border clear. Evenly distribute the tomato mixture on top of the feta.

          Optional Egg Wash: If desired, beat the egg in a small bowl and brush it on the edges of the puff pastry for a golden finish.

            Bake: Place the tart in the preheated oven and bake for about 25-30 minutes or until the pastry is golden and crispy.
