Feta and Spinach Chicken Sausage Pasta

Ingredients
  

8 oz (225 g) whole wheat pasta (fusilli or penne)

2 links (about 8 oz) chicken sausage, sliced (preferably with spinach and feta flavors)

2 cups fresh spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup crumbled feta cheese

3 cloves garlic, minced

1 small onion, finely chopped

2 tbsp olive oil

1 tsp dried oregano

1/2 tsp red pepper flakes (optional for heat)

Salt and pepper to taste

1/4 cup fresh basil, chopped (for garnish)

Zest of 1 lemon (for freshness)

Juice of 1/2 lemon (to taste)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Chicken Sausage: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced chicken sausage and cook for about 5-7 minutes until browned and heated through.

      Add Aromatics: Add the chopped onion and minced garlic to the skillet. Cook for another 3-4 minutes until the onion becomes translucent and fragrant.

        Incorporate Spinach & Tomatoes: Stir in the chopped spinach and halved cherry tomatoes. Cook for an additional 3-4 minutes until the spinach has wilted and tomatoes start to soften.

          Mix Pasta & Season: Toss the cooked pasta into the skillet with the sausage and vegetables. If the mixture appears dry, add a bit of the reserved pasta water. Stir in the crumbled feta, oregano, red pepper flakes, lemon zest, and lemon juice. Season with salt and pepper to taste.

            Garnish and Serve: Remove from heat and top with fresh basil. Serve immediately, garnished with extra feta cheese if desired.
