4 boneless, skinless chicken breasts

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

2 tablespoons fresh thyme, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 large eggs

1/4 cup all-purpose flour

For the Garlic Mashed Potatoes:

2 pounds Yukon Gold potatoes, peeled and cut into chunks

4 cloves garlic, peeled and crushed

1/2 cup heavy cream

4 tablespoons unsalted butter

Salt and pepper, to taste

Fresh chives, chopped for garnish

Prep the Chicken: Preheat your oven to 400°F (200°C). On a shallow plate, combine breadcrumbs, Parmesan cheese, parsley, thyme, garlic powder, onion powder, salt, and pepper. In a separate bowl, whisk the eggs. Place flour on another plate.

    Bread the Chicken: Take each chicken breast and first coat it in flour, shaking off the excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken in the breadcrumb mixture, pressing gently to ensure it sticks. Place the breaded chicken on a lined baking sheet.

      Bake the Chicken: Lightly spray the chicken with cooking spray or drizzle with a bit of olive oil for extra crispiness. Bake for about 20-25 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).

        Cook the Potatoes: While the chicken is baking, bring a large pot of salted water to a boil. Add the chunks of potatoes and the crushed garlic. Cook until the potatoes are tender (about 15-20 minutes).

          Mash the Potatoes: Drain the potatoes and garlic, then return them to the pot. Add heavy cream and butter. Mash until smooth and creamy. Season with salt and pepper to taste.
