4 large russet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese

1 cup cooked and crumbled bacon (or vegetarian bacon)

½ cup sour cream

½ cup green onions, chopped

Optional: ½ cup jalapeños, sliced

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Pat them dry and then pierce each potato multiple times with a fork. This will help them cook evenly and avoid bursting.

      Season the Potatoes: In a large mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the potatoes into the bowl and toss them until they are evenly coated with the oil and seasonings.

        Bake the Potatoes: Place the seasoned potatoes directly on a sheet pan lined with parchment paper. Bake in the preheated oven for about 45-55 minutes or until the potatoes are fork-tender and the skin is crispy. Turn the potatoes halfway through for even cooking.

          Load the Potatoes: Once the potatoes are cooked, carefully remove them from the oven. Cut them in half lengthwise and gently scoop out a small portion of the inside of each potato, leaving enough to maintain its structure.

            Add Fillings: Sprinkle a generous amount of shredded cheddar cheese and crumbled bacon (or vegetarian bacon) into each potato half. Return them to the oven for another 5-7 minutes or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and top each loaded potato with a dollop of sour cream, a sprinkle of chopped green onions, and jalapeños if desired. Serve warm and enjoy your creamy, cheesy, and crispy loaded potatoes!
