Ingredients

1 pound potato gnocchi

1 cup butternut squash, peeled and diced

1 cup Brussels sprouts, trimmed and halved

1 cup kale or spinach, roughly chopped

1 cup vegetable broth

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon ground sage

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup heavy cream (or coconut milk for a dairy-free option)

½ cup grated Parmesan cheese (optional)

Fresh parsley for garnish

Instructions

Prepare the Vegetables: Begin by washing and chopping all your vegetables: dice the butternut squash, halve the Brussels sprouts, and chop the kale or spinach.

Layer in the Crockpot: Place the diced onion, garlic, butternut squash, Brussels sprouts, and kale/spinach into your slow cooker.

Add Seasonings: Sprinkle in the dried thyme, ground sage, red pepper flakes (if using), salt, and pepper. Stir well to combine all the ingredients.

Pour in Liquid: Carefully pour the vegetable broth over the mixture in the crockpot, ensuring the vegetables are submerged in the liquid.

Cook on Low: Cover and set the crockpot to low for about 4-5 hours, or until the vegetables are tender.

Incorporate Gnocchi: About 30 minutes before serving, add the potato gnocchi to the crockpot. Stir gently to mix, allowing them to cook in the broth and absorb the flavors.

Add Cream and Cheese: Once the gnocchi is cooked through, stir in the heavy cream (or coconut milk) and grated Parmesan cheese, heating through for an additional 10-15 minutes.

Serve: Spoon the delicious gnocchi mixture into bowls and garnish with freshly chopped parsley for a touch of color and flavor. Enjoy your cozy meal!
