Ingredients

1 medium butternut squash, peeled and cubed

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

4 large whole wheat tortillas

1 cup baby spinach or mixed greens

1 cup crumbled feta cheese

½ cup dried cranberries

¼ cup toasted pumpkin seeds

2 tablespoons balsamic glaze

Fresh parsley, chopped for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Roast the Squash: In a large bowl, toss the cubed butternut squash with olive oil, cumin, smoked paprika, salt, and pepper. Spread it in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes or until the squash is tender and caramelized, flipping halfway through.

Prepare the Tortillas: While the squash is roasting, warm the whole wheat tortillas in a dry skillet over medium heat for about 30 seconds on each side, until pliable.

Assemble the Wraps: Once the butternut squash is done, remove it from the oven and let it cool slightly. Place a generous handful of spinach or mixed greens in the center of each tortilla. Add a portion of the roasted squash, then sprinkle with crumbled feta, dried cranberries, and toasted pumpkin seeds.

Drizzle and Roll: Drizzle each wrap with balsamic glaze. Carefully fold in the sides of the tortilla, then roll it up tightly from the bottom to the top until all the fillings are enclosed.

Slice and Garnish: Using a sharp knife, slice each wrap in half diagonally. Garnish with chopped parsley for a fresh finish.

Serve: Arrange the wraps on a platter and serve immediately as a hearty lunch or dinner option, or refrigerate for a quick meal enjoy later.
