1 ½ cups graham cracker crumbs

¼ cup sugar

½ cup unsalted butter, melted

16 oz cream cheese, softened

1 cup granulated sugar

3 large eggs

1 tablespoon vanilla extract

½ cup sour cream

½ cup brewed espresso, cooled

2 teaspoons instant coffee granules (optional, for extra flavor)

For the topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Grated dark chocolate or cocoa powder (for garnish)

Preheat the oven: Preheat your oven to 325°F (160°C).

    Prepare the crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 8-10 minutes until set and lightly golden. Remove from the oven and allow to cool.

      Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix until creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, cooled espresso, and instant coffee granules (if using) until fully incorporated.

        Combine and pour: Pour the cheesecake filling over the cooled crust and spread evenly. Tap the pan gently on the counter to release any air bubbles.
