1 medium zucchini, grated (about 1 cup packed)

1 cup rolled oats

1/2 cup almond flour (or all-purpose flour)

1/4 cup maple syrup or honey

1/3 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Grate the zucchini and using a clean kitchen towel, squeeze out excess moisture. This will prevent your cookies from becoming soggy.

      Mix Dry Ingredients: In a large bowl, combine the rolled oats, almond flour, baking powder, cinnamon, and salt. Stir well to ensure all dry ingredients are evenly mixed.

        Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup (or honey), and vanilla extract until well blended.
