Easy Zucchini Bars with Cinnamon Glaze

2 cups grated zucchini (about 2 medium zucchinis)

1¼ cups all-purpose flour

½ cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ cup chopped walnuts or pecans (optional)

For the Cinnamon Glaze:

1 cup powdered sugar

2-3 tbsp milk (or alternative milk)

1 tsp ground cinnamon

½ tsp vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish or line it with parchment paper for easy removal.

    Prepare Zucchini: Grate the zucchinis using a box grater or food processor. If they are very watery, press them gently in a clean kitchen towel to remove excess moisture.

      Mix Wet Ingredients: In a large mixing bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.

        Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix it until the dry ingredients are well blended.

          Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Do not overmix. Gently fold in the grated zucchini and nuts if using.
