1 block (14 oz) firm tofu, pressed and cubed

2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)

2 tablespoons vegetable oil (or sesame oil for flavor)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon hoisin sauce (optional for sweetness)

1 tablespoon cornstarch

2 cups cooked rice (white, brown, or jasmine)

Green onions, sliced (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Prepare the Tofu: Press tofu for at least 15 minutes to remove excess moisture. Once pressed, cut it into bite-sized cubes. Toss the cubed tofu with cornstarch until evenly coated for a crispy texture.

    Cook the Rice: If you haven't already, start with cooking your rice according to package instructions. This can be done while you prepare other ingredients.

      Stir-Fry Tofu: Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the tofu cubes and sauté for about 5-7 minutes, turning occasionally until golden brown. Remove tofu from the pan and set aside.

        Sauté Veggies: In the same skillet, add another tablespoon of oil. Add minced garlic and ginger; stir-fry for about 30 seconds until fragrant. Then, add your mixed vegetables. Stir-fry for 4-5 minutes until they are tender-crisp.

          Combine Ingredients: Return the cooked tofu to the skillet with the vegetables. Pour in the soy sauce and hoisin sauce (if using). Toss everything together to ensure the tofu and veggies are well-coated in the sauce. Cook for an additional 2-3 minutes to heat through.

            Final Touches: Taste and season with salt and pepper as needed.

              Serve: Serve hot over a bed of rice. Garnish with sliced green onions and a sprinkle of sesame seeds for an extra touch.
