4 whole wheat tortillas

1 cup shredded mozzarella cheese

1 cup bell peppers (red, yellow, and green), diced

1 cup spinach, chopped

½ cup corn kernels (canned or frozen)

½ cup black beans, rinsed and drained

½ teaspoon cumin

½ teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil

Optional: salsa and guacamole for dipping

Prepare the Veggies: Start by washing and chopping the bell peppers and spinach. If using frozen corn, ensure it's thawed and well-drained.

    Mix the Filling: In a large mixing bowl, combine the diced bell peppers, chopped spinach, corn, black beans, cumin, garlic powder, salt, and pepper. Mix well until all ingredients are evenly coated with spices.

      Heat the Skillet: Place a large non-stick skillet over medium heat and add 1 tablespoon of olive oil. Allow it to heat up for a minute.

        Assemble the Quesadillas: Lay one tortilla in the skillet. On one half of the tortilla, sprinkle a generous layer of shredded mozzarella cheese, followed by a heaping spoonful of the veggie mixture. Fold the tortilla in half over the filling.
