2 cups cooked jasmine rice (preferably day-old)

2 large eggs

1 cup mixed vegetables (carrots, peas, corn, and bell peppers)

3 green onions, finely sliced

2 cloves garlic, minced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon vegetable oil

Salt and pepper, to taste

Optional: sesame seeds, for garnish

Prepare the Rice: If you don’t have day-old rice, cook 1 cup of jasmine rice according to package instructions, then spread it on a baking sheet to cool and dry for about 20 minutes. This prevents the rice from becoming mushy.

    Scramble the Eggs: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Beat the eggs in a bowl, then pour them into the pan. Scramble until fully cooked, about 2-3 minutes. Remove the eggs from the pan and set aside.

      Sauté the Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds until fragrant.

        Cook the Vegetables: Add the mixed vegetables to the skillet. Stir-fry for about 3-4 minutes, until the veggies are tender but still vibrant in color.
