Easy Taco-Stuffed Sweet Potatoes for Dinner

4 medium sweet potatoes

1 pound ground turkey or beef

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 packet taco seasoning (or homemade)

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Salt and pepper to taste

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash and scrub the sweet potatoes thoroughly. Pierce each potato several times with a fork to allow steam to escape. Place them on a baking sheet lined with parchment paper and drizzle with olive oil. Sprinkle with salt and pepper.

      Bake Sweet Potatoes: Bake in the preheated oven for 45-50 minutes, or until tender. (You can check doneness by inserting a fork or knife; it should slide in easily.)

        Cook Meat: In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the ground turkey or beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

          Season Meat: Add the taco seasoning to the meat, stirring to combine. If the mixture seems dry, add a splash of water. Next, add the black beans and corn. Stir well and cook for another 3-5 minutes until heated through. Remove from heat.

            Assemble Stuffed Potatoes: Once sweet potatoes are done, carefully slice them open lengthwise, fluffing the insides with a fork. Generously spoon the taco meat mixture into each potato.

              Add Toppings: Top each stuffed sweet potato with halved cherry tomatoes, shredded cheddar cheese, diced avocado, and chopped cilantro.

                Serve: Squeeze lime juice over the top for added flavor. Serve immediately while warm.
