Ingredients

1 pound ground turkey (or beef)

1 cup uncooked brown rice

2 cups vegetable broth (or chicken broth)

4 medium bell peppers (any color, diced)

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper

1 cup shredded cheese (cheddar or mozzarella)

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 350°F (175°C).

In a large skillet over medium heat, cook the ground turkey (or beef) until browned, breaking it apart as it cooks. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.

Stir in the diced bell peppers, canned tomatoes (with juices), uncooked rice, vegetable broth, Italian seasoning, smoked paprika, salt, and pepper. Bring this mixture to a boil, then reduce the heat to low and cover. Let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.

Once cooked, transfer the mixture to a greased 9x13-inch baking dish. Spread it evenly, and top with shredded cheese.

Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Afterward, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Once out of the oven, let the casserole sit for about 5 minutes. Garnish with fresh parsley before serving.
