6 large eggs

1 cup fresh spinach, chopped

1/2 cup crumbled feta cheese

1/4 cup milk (whole or low-fat)

1/2 cup cherry tomatoes, halved

1/4 cup diced onion

1 clove garlic, minced

1/2 teaspoon dried oregano

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley or basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a medium skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 2-3 minutes. Stir in the minced garlic and cherry tomatoes, cooking for an additional 2-3 minutes until the tomatoes begin to soften.

      Add Spinach: Add the chopped spinach to the skillet and cook for another minute or until wilted. Season the mixture with dried oregano, salt, and pepper. Remove from heat and set aside to cool slightly.

        Whisk the Eggs: In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.

          Combine Ingredients: Stir the sautéed vegetable mixture and crumbled feta cheese into the egg mixture, ensuring everything is evenly distributed.

            Prepare Baking Dish: Grease a 9x13 inch baking dish lightly with olive oil or cooking spray.
