8 oz (about 2 cups) penne pasta

1 lb Italian sausage (sweet or spicy, your choice), casings removed

1 medium red bell pepper, sliced

1 medium yellow bell pepper, sliced

1 medium onion, sliced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

1 teaspoon Italian seasoning

¼ teaspoon red pepper flakes (optional)

3 cups baby spinach

½ cup grated Parmesan cheese, plus extra for serving

2 tbsp olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and use a wooden spoon to break it apart. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add another tablespoon of olive oil. Sauté the sliced onion and peppers until they are tender, about 5 minutes. Add the garlic and cook for another minute, until fragrant.

        Combine Ingredients: Return the cooked sausage to the skillet. Pour in the diced tomatoes (with their juices), Italian seasoning, red pepper flakes (if using), and the cooked pasta. Stir to combine everything well.

          Add Spinach: Fold in the baby spinach and cook for another 2-3 minutes until wilted. Season with salt and pepper to taste.

            Finish with Cheese: Sprinkle in the grated Parmesan cheese and mix until well incorporated. Allow the pasta to heat through for another minute.
