Easy Shrimp Scampi Linguine

8 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/4 cup unsalted butter

2 tablespoons olive oil

1/2 cup dry white wine (like Sauvignon Blanc)

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Juice of 1 lemon

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain, reserving 1/2 cup of the pasta water, and set aside.

    Sauté the Shrimp: In a large skillet over medium-high heat, add the olive oil and 2 tablespoons of butter. Once the butter has melted and is bubbly, add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant.

      Add the Shrimp: Add the shrimp to the skillet in a single layer. Season with salt and black pepper. Cook for about 2-3 minutes on each side until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Make the Sauce: In the same skillet, pour in the white wine and bring to a simmer, scraping any browned bits from the bottom of the pan. Allow the wine to cook down for about 2-3 minutes.

          Combine: Reduce the heat to low and return the shrimp to the skillet. Add the lemon juice and the remaining butter, stirring to combine. If the sauce seems too thick, add a little of the reserved pasta water until desired consistency is reached.

            Toss with Linguine: Add the cooked linguine to the skillet and gently toss everything together to coat the pasta evenly in the sauce.

              Garnish and Serve: Remove from heat and stir in the chopped fresh parsley. Serve the shrimp scampi linguine immediately, topped with grated Parmesan cheese to taste.
