Easy Sheet Pan Lemon Garlic Salmon

4 (6 oz) salmon fillets, skin-on or skinless

1 lemon, zested and juiced

4 cloves garlic, minced

1/4 cup olive oil

1 tsp salt

1/2 tsp black pepper

1 tsp dried oregano

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into rounds

1 cup asparagus, trimmed

Fresh parsley, chopped, for garnish

Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Marinade: In a small bowl, whisk together the lemon zest, lemon juice, minced garlic, olive oil, salt, pepper, and dried oregano.

      Marinate the Salmon: Place the salmon fillets on one side of the prepared baking sheet. Pour half of the marinade over the salmon, making sure to coat each piece well. Let it marinate for about 15 minutes while you prepare the vegetables.

        Add the Vegetables: On the other side of the baking sheet, arrange the cherry tomatoes, zucchini rounds, and asparagus. Drizzle the remaining marinade over the vegetables and toss them gently to ensure they are evenly coated.
