Originating from the classic gooey butter cake, which hails from St. Louis, Missouri, the gooey butter cookie is a modern twist on this beloved dessert. The original cake was created in the 1930s by a baker who accidentally mixed up the ingredients, resulting in a rich, buttery treat that has since become a staple in many homes. The popularity of gooey butter cake paved the way for its cookie counterpart, which maintains the same lush texture and buttery flavor but in a conveniently bite-sized form.

Ingredients

1 cup unsweetened applesauce

1/2 cup natural peanut butter

2 ripe bananas, mashed

1/2 cup brown sugar

1 tsp vanilla extract

1/2 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/2 tsp baking powder

1/4 tsp salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped walnuts (optional)

Instructions

Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan or line it with parchment paper.

In a large mixing bowl, combine the unsweetened applesauce, peanut butter, mashed bananas, brown sugar, and vanilla extract. Mix until well combined and smooth.

In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

If desired, fold in the dark chocolate chips and walnuts for added texture and flavor.

Pour the brownie batter into the prepared baking pan, spreading it evenly in all corners.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.

Once cooled, cut into squares and enjoy your delicious Peanut Butter Banana Brownies!
