1 store-bought flatbread or naan

2 ripe peaches, sliced

1 tablespoon olive oil

1 teaspoon honey (or maple syrup, for a vegan option)

1/2 cup fresh basil leaves, roughly chopped

1/2 cup fresh mozzarella cheese, torn into small pieces (or vegan cheese cubes)

Salt and black pepper, to taste

Balsamic glaze (for drizzling, optional)

1 tablespoon pine nuts or walnuts, toasted (optional)

Instructions
 

Preheat your oven: Set your oven to 400°F (200°C).

    Prepare the flatbread: Place the flatbread or naan on a baking sheet. Brush one side with olive oil to ensure it gets nice and crispy.
