Easy Mexican Lasagna

Ingredients
  

9 tortillas (corn or flour)

1 pound ground beef or turkey

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (15 oz) diced tomatoes with green chilies

2 cups shredded cheese (Mexican blend or cheddar)

1 packet taco seasoning

1 cup salsa

1/2 cup sour cream

1/4 cup chopped fresh cilantro (optional for garnish)

Optional toppings: sliced jalapeños, avocado slices, or extra cheese

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.

      Add Seasoning: Stir in taco seasoning and let it cook for another 2 minutes, mixing well to combine. Add black beans, corn, and diced tomatoes with green chilies. Stir to combine and remove from heat.

        Prepare the Baking Dish: Spread 1/2 cup of salsa on the bottom of a 9x13 inch baking dish to prevent sticking.

          Layer the Lasagna:

            - Place 3 tortillas on top of the salsa, slightly overlapping.

              - Spread half of the meat mixture over the tortillas.

                - Add 1/3 of the shredded cheese on top.

                  - Pour 1/3 of the remaining salsa over the cheese.

                    - Repeat the layers: 3 more tortillas, the remaining meat mixture, another 1/3 of cheese, and 1/3 of salsa.

                      - Finish with the last 3 tortillas, the remaining salsa, and the last of the shredded cheese on top.

                        Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.

                          Cool & Serve: Once baked, let the lasagna cool for about 10 minutes. Garnish with fresh cilantro and add optional toppings if desired.

                            Slice & Enjoy: Cut into squares and serve warm, paired with sour cream or additional salsa on the side.
