1 pound large shrimp, peeled and deveined

2 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1/4 cup fresh lemon juice (about 2 lemons)

2 tablespoons olive oil

1 teaspoon lemon zest

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving, optional)

Prepare the Zucchini Noodles: Start by spiralizing the zucchinis into noodles using a spiralizer or julienne peeler. Place them in a colander, sprinkle with salt, and let them sit for about 10 minutes to release excess moisture.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant, being careful not to burn the garlic.

      Cook the Shrimp: Add the peeled and deveined shrimp to the skillet. Season with salt and pepper. Cook for about 2-3 minutes on one side, then flip and cook for an additional 2-3 minutes until the shrimp is pink and opaque.
