1 pound fresh spinach, washed and drained

2 tablespoons sesame oil

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sugar

2 cloves garlic, minced

1 tablespoon sesame seeds, toasted

1 small carrot, julienned

2 green onions, finely chopped

Salt, to taste

Black pepper, to taste

Instructions
 

Blanch the Spinach: Bring a large pot of water to a boil. Add the spinach and cook for about 1-2 minutes until just wilted. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, squeeze out excess water and chop the spinach into bite-sized pieces.

    Prepare the Dressing: In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, sugar, minced garlic, and a pinch of salt and black pepper until the sugar is dissolved.

      Combine the Ingredients: In a large mixing bowl, combine the blanched spinach, julienned carrot, and green onions. Pour the dressing over the salad and toss gently to coat all the ingredients well.

        Garnish: Sprinkle the toasted sesame seeds over the salad and give it another light toss.
