Easy Coffee Cake Muffins Recipe

Ingredients
  

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup milk

1 tablespoon baking powder

1 teaspoon vanilla extract

½ teaspoon salt

½ teaspoon ground cinnamon

½ cup packed brown sugar

½ cup chopped walnuts or pecans (optional)

1 tablespoon powdered sugar (for dusting)

Instructions
 

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

    In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.

      Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        In a separate bowl, combine the flour, baking powder, salt, and ground cinnamon.

          Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined; do not overbeat.

            In a small bowl, make the streusel topping by mixing brown sugar, walnuts (if using), and ground cinnamon together.

              Fill the muffin cups about halfway with the batter. Sprinkle a spoonful of the streusel topping over the batter, then add another layer of batter on top to fill the cups about ¾ full. Finish with another sprinkle of streusel on top.

                Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                  Remove from oven and allow to cool in the pan for about 5 minutes before transferring muffins to a wire rack to cool completely.

                    Dust with powdered sugar before serving for a sweet touch.
