Easy Chili Mac and Cheese Skillet

1 lb ground beef (or turkey for a lighter option)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes, undrained

2 cups beef or chicken broth

1 cup elbow macaroni

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

2 cups shredded sharp cheddar cheese

1/4 cup fresh cilantro, chopped (optional, for garnish)

Sliced jalapeños (optional, for added heat)

Instructions
 

Brown the Meat: In a large skillet over medium heat, brown the ground beef (or turkey) until fully cooked, about 5-7 minutes. Drain any excess fat.

    Sauté Aromatics: Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion becomes translucent and aromatic.

      Combine the Ingredients: Stir in the drained kidney beans, diced tomatoes (with their juice), beef (or chicken) broth, elbow macaroni, chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine all ingredients.

        Cook the Pasta: Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and let it simmer for about 10-12 minutes, or until the macaroni is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.
