1 can (15 oz) chickpeas, rinsed and drained

1 ripe avocado, halved and pitted

1 tablespoon fresh lemon juice

2 tablespoons Greek yogurt (or a dairy-free substitute)

1 clove garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

4 large whole grain tortillas or wraps

1 cup fresh spinach or mixed greens

1 medium tomato, diced

1 small cucumber, diced

Fresh cilantro or parsley, for garnish (optional)

Hot sauce or your favorite dressing (optional)

Prepare the Chickpea Mixture: In a medium mixing bowl, add the rinsed chickpeas. Using a fork or a potato masher, mash the chickpeas until you have a rough blend (you want a mixture that’s still chunky).
