1 lb boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

1 medium onion, thinly sliced

4 large flour tortillas (or whole wheat)

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or a Mexican blend)

Optional: sour cream, guacamole, or salsa for serving

Instructions
 

Prepare the Chicken Marinade: In a large bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Add the sliced chicken and toss until well coated. Let it marinate for about 5 minutes while you prep the veggies.

    Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink. Transfer the cooked chicken to a plate.

      Sauté the Vegetables: In the same skillet, add the sliced bell peppers and onion. Sauté for about 5 minutes, or until they are tender but still crisp. Season with a little salt and pepper if desired.

        Combine Everything: Return the cooked chicken to the skillet with the vegetables. Stir everything together and cook for another minute until heated through.
